Types of whisky stills
Whisky is produced by fermenting and distilling the grain mash. The output is aged and blended to get the required colour, flavour and taste. In the distillation process, the principle that ethanol, water and congeners have different boiling points is used to separate them.

It still consists of a boiler, a column and a condenser. Once the mixture is heated in the still the different elements boil off at different boiling points and the vapours rise to the neck of the still. The vapours are condensed and alcohol is collected in a vessel. The different stills used in the distillation process are as follows:

Pot Still
This distillation process in the pot still is also called batch distillation or discontinuous distillation because only one batch can be distilled at a time. These still are made of copper and have a pear, lantern or onion shape. This leads to the large surface area being heated and an increase in the reflux that creates a lighter new make.

Column still
The distillation process done using the still is called continuous distillation. The speed of production offered by this type of distillation with reduced costs makes it a favoured choice. However, the aroma and the flavour are affected due to the faster process. It is made up of stainless steel.

Doubler in Bourbon distillation
This is used for double distillation and along with the main continuous still there is a second continuous still. This second still is called the doubler or thumper. Once the alcohol is extracted from the still it is passed through the second still where catalytic conversions take place.
